Every year, Gujrat celebrates number of festivals. The International Kite Festival (Uttarayan) is regarded as one of the biggest festival celebration.
Undhiyu is a Gujarati mixed vegetable dish that is a regional specialty of Gujarat. The name of this dish comes from the Gujarati words “Matlu” meaning earthen pot and “Undhu” meaning upside down since they have been traditionally cooked upside down underground in earthen pots fired from above.
Undhiyu is a delicious mix of vegetables, mainly root vegetables, with beans and muthias cooked in a green masala. The traditional ones are cooked in an earthen pot over firewood, the ones in restaurants float in a lot of oil.
Today I am presenting Undhiyu made in less oil for today’s calorie conscious people.
Surati beans(wal papadi)-1Bowl
Elephant Foot ( Suran) -1 Bowl
Astafodia(Hing)-1/4 T Spoon
Carom Seeds(Ajwain)-1/4 T Spoon
Salt- To Taste
Lemon juice – Of One medium size Lemon
Red Chilli Powder-1 T Spoon
Groundnut Powder-1 Tb Spoon
Seasame (Til)-1 Tb Spoon
Jeera-1/4 T Spoon
Cashew-5 or 6
Garam masala-1/2 T Spoon
Grated Coconut-1 Tb Spoon
For Methi Ghatta(Muthia)
Finely Chopped Fenugugreek Leaves(Methi Leaves)-1 Bowl
Chilli Powder-3/4 T Spoon
Grated Coconut-3/4 T Spoon
Ground nut oil-3/4 Tb Spoon
Mix all the Ghatta ingridents and make stiff dough.
Make small oval dumplings and keep aside
Take Green chillies,ginger,groundnut,seasame, cashew,coconut and grind it.
Add red chilli powder,turmeric powder,garam masala and mix it well with lemon juice & jaggery. Keep Aside.
Take a heavy bottom pan,Heat sufficient oil and deep fry all the muthias kept aside.Let it cool down.
In the same pan add ajwain , jeera , hing & one by one add all vegetables.Every time while adding vegetables stir well so that it fries well.Add grinded masala, Salt , little water and cover it to cook properly.This will also help to protect the aroma.
Once it cooked well then add few Muthias and coriander leaves , Mix it well.
Garnish the preparation with remaining Muthias & corriander leaves.
Undhiyu Can be serve hot with Puri or can be eaten as it is.
